Prepare and prebake a 9-inch pie crust.
Fill half of the crust with granulated sugar and a rounded table spoon of flour.
Add a tiny pinch of salt.
Stir with fingers so as not to break the crust. Dot with one table-spoon of butter. Sprinkle with nutmeg.
Place in 400 degree oven for 10 minutes. Reduce temperature to 350 and bake until the custard thickens. Don't overcook. Cool on a wire rack.
